Matcha Ice Cream Recipe

There's always joy in eating ice cream and making it at home makes it even more special because we have control over every ingredient and can experiment with flavours and tastes

When you add matcha to the mix, it transforms the entire experience

I've always loved matcha and its unique flavour, as it offers a delightful balance between bitter and sweet

I came across a matcha ice cream recipe from a friend and decided to try it at home.

Ingredients 

  • 1 tablespoon ceremonial-grade matcha powder 

  • 1 cup whole milk (240 ml) 

  • 2 cups of whipping cream 

  • 3/4 cups of sugar  

  • 2 egg yolks 

  • 1/2 teaspoon vanilla extract

The preparation of matcha ice cream is simple and enjoyable

It requires only a few simple steps to create a flavourful ice cream.

Step 1: Heat the milk by adding the whipping cream and sugar on a low flame and stirring continuously.

Step 2: Add a small amount of milk to the matcha powder and whisk until it becomes smooth. Continue whisking the matcha with the remaining milk until it is fully dissolved.

Matcha Ice CreamStep 3: Whisk the eggs separately in a bowl. Then, gradually add the hot matcha mixture to the bowl with eggs and whisk continuously until the mixture and the eggs are well combined.

Repeat this process with the remaining mixture. For added flavour, you can include a splash of vanilla (optional).

Step 4: Heat the matcha mixture on a low flame for about 3 minutes, remove the heat and allow it to cool to room temperature for approximately 20 minutes, then refrigerate for at least 4 hours.

Step 5: Pour the refrigerated matcha mixture into an ice cream maker and freeze for about 20 minutes. Then transfer it to an airtight container and freeze it for an additional 4 hours.

Hint 

  • Use high-quality matcha powder for the best flavour and vibrant color. For the best result, use ceremonial-grade matcha.

  • If you want a creamier texture, use condensed milk.

  • If you prefer an alternative to egg, use marshmallow as it gives thickness.

Trying out the recipe was a great experience. I truly enjoyed the rich, earthy flavour of matcha ice cream.

It had a slightly bitter taste balanced with light sweetness, making it very refreshing.

I'll make it again. If you love matcha, I highly recommend this for its delightful flavour and taste.
